Every name tells a tale, and Branka is no exception. More than just a restaurant, it pays homage to Batroun’s maritime spirit, family roots, and dishes that have defined generations. We sat down with the owners to ask some questions about the purpose, memories, and inspiration behind it all.
The Story Behind “Branka”
“Branka” is such a distinctive name—can you share the history or inspiration behind choosing it for your restaurant?
Branka’s name honors Batroun’s rich maritime heritage. The term “Branka” refers to the traditional triple-hook fish hook exclusively used by local sailors, with each hook representing power, skill, and the sea’s unending richness. By adapting this emblem, we honor the craftsmanship and seafaring tradition that have molded our community for generations. Guests frequently comment on its distinctiveness, and discussing its narrative is the ideal way to bond over rich local tradition—and perhaps even inspire a few new stories of your own.
Family or Cultural Roots
Does the name “Branka” have personal or cultural significance to you or your family?
How does that heritage influence the restaurant’s identity?
“Branka” maintains our family’s seafaring legacy—having been reared by sailors on Batroun’s coastlines, we grew up hearing the name and eating home-cooked fish. It shapes our cuisine, which consists of simple, hearty foods passed down through generations, such as Fish Kibbeh and Stuffed Calamari. At the same time, we celebrate innovation with amusing twists like Octopus Tabbouleh and Branka Salad. Every mouthful at Branka honors our marine heritage and the pleasant, communal spirit it fosters.
Signature Dish Origins
If we had to choose from your menu three main traditional dishes you serve—can
you tell me how each one came to be on your menu? (e.g., was there a family
recipe, a local inspiration, or a special moment that sparked each dish?)
- Fish Kibbeh
This was my grandparents’ hallmark recipe and a true Batroun family treasure. Fresh local fish is chopped with bulgur, onions, and a special blend before being baked —as my parents learnt in their childhood kitchens. It’s a must-try that captures our family’s coastal roots with every bite. - Stuffed Calamari
This one, a rare gem even around here, was inspired by my mother’s creative energy. We fill soft calamari tubes with sautéed veggies, aromatic spices, and chopped shrimpand calamari tenticules —a savory twist on a local favorite that honors the recipes passed down by our sailors-turned-home cooks. - Octopus Tabbouleh
Inspired by a spark of inspiration in our open kitchen, we paired Batroun’s famed tabbouleh—bright herbs, acidic lemon, and luscious tomatoes—with smokey, grilled octopus. It’s a fun combination that honors tradition while exposing the sea’s riches. Don’t miss our Branka Salad, which features crisp cucumbers, vine-ripened cherry tomato, and sweet onions topped with marinated fish—another family-inspired favorite that wonderfully reflects Batroun’s fresh, communal flavors.
Evolution of the Classics
Have any of those signature dishes changed over time? If so, what prompted
those tweaks and how have guests responded?
Our “Siyadiyeh” started out as the traditional Batroun fish-and-American-rice bake, but we couldn’t resist including the Italian risotto process. By toasting short-grain rice with garlic and onion before pouring in fragrant fish stock, we’ve enhanced the dish’s natural sweetness and created a delightfully creamy texture.
Guests enjoy the deeper, more nuanced flavors—many describe it as both nostalgically familiar and thrillingly fresh, making it one of our most popular plates.
Another guest favorite dish is inspired by the famous Batroun Balamida (Bonito tuna) marinated fish, which was previously a handmade staple, we’ve applied the same garlicky, lemony, herb-packed combination to premium tuna loin. The end result is a vivid, melt-in-your-mouth crudo that feels both timeless and completely new. Guests adore its zingy freshness and velvety smoothness.
Every meal at Branka tells a story, and each one leads you closer to Batroun’s heart. Whether you come for the cuisine, the tradition, one thing is certain: With every bite you get hooked.
